Yes, I do all this.  This is both the maintenance of plant structure, and, the development and refining of plant structure.  These four terms are inter-related.  Collectively they can be called 'trimming', and with careful aesthetic, 'sculpturing', in the sense of making a graceful structure with potentially 'fine detail'.  Most any plant with growth that can be attractively modified can be trained by appropriate trimming to keep the plant smaller and/or more stylish than it would on it's own.
